BETWEEN THE SEA AND THE COUNTRYSIDE, THE EMILIA ROMAGNA OF HIS CHILDHOOD

After opening and expanding his Al Cambio restaurant offering typical Bolognese cuisine, Massimiliano Poggi opted for a more sophisticated traditional cuisine with Vicolo Colombina in Bologna’s historic downtown, and in 2016 he opened the contemporary restaurant that bears his name, Massimiliano Poggi Cucina, in Trebbo di Reno, in the countryside just outside Bologna.

The main inspiration for his cuisine comes from the sea of Romagna, where he began his career, the fresh pasta from Emilia he ate growing up, and the vegetables and flavourful herbs from the countryside that have always enchanted him.

These elements are combined with smoking or cooking methods that preserve the flavour of the ingredients, advanced processing techniques and dishes arranged to create aesthetically perfect compositions.
